As we honour the 140th anniversary of the Hong Kong Jockey Club, Chef Eyck Zimmer invites you to rediscover that spirit of camaraderie and indulgence through his reimagined dining experience.La Belle Époque is not just a meal; it’s a journey through time that awakens the senses. First launching this themed dinner in January 2023, Chef Eyck’s aim was to “take guests back to the good old times when things were simpler; when it was all about the hospitality and the service.”
This November, Chef Eyck masterfully revives his exquisite eight-course wine pairing dinner, each dish telling a story steeped in history and crafted with love. As you step into the elegantly adorned Centurion, you’re enveloped in an ambiance that echoes the charm of a bygone era—soft candlelight, delicate floral arrangements, and the warm hum of conversation creating a symphony of connection.

It’s a remarkable concept that resonates deeply with our members. Their enthusiasm and satisfaction motivate me to keep the experience fresh and exciting. The personable service we provide enhances the exclusivity of the dining experience. A significant source of my inspiration comes from silverware. I love exploring antique silverware, whether I’m in Hong Kong or traveling, to elevate our presentations and truly bring La Belle Époque to life.
As we prepare to launch this season’s La Belle Époque in November, I’m already brainstorming for the next one. I’m considering using an ostrich egg for an Amuse-bouche, inspired by the fact that in the 18th century, they were delicacies for the elite. It would be incredible to include this unique element in our 21st-century menu. I’m also looking for a silver egg cup for serving sea urchin, especially as I plan a trip to Cape Town. My fascination with antique silverware has led me to acquire unique pieces like a bread fork and lemon squeezer, which I aim to incorporate into the dining experience to tell a story. I'm even on the lookout for a serving trolley to enhance the overall presentation.

Menu highlights include the iconic Pigeon a la presse, which I prepare in front of the guests for a multi-sensory experience filled with flames, aromas, and captivating visuals. The room buzzes with excitement as guests engage with the cooking process. Lobster Wellington showcases the best seasonal Atlantic lobsters, perfect for festive celebrations, while the return of Egg Sabayon, a classic dessert, is sure to impress.
3. Can we expect another sweet surprise at the end of the meal?
Of course! For dessert, Egg Faberge will debut in pink and white chocolate with a hint of ginger. Much like the House of Faberge, which showcases different stones each season, my dessert will evolve in appearance and flavour. Creating this dish is akin to fashion design; I play with textures and colours to give it a new twist. This year, I’ve drawn inspiration from the classic Peach Melba, incorporating white peach, raspberry, and ginger for a modern legacy.
4. What else can we look forward to?
Additionally, the Amuse Bouche will feature a few surprises to delight guests at the start of the meal, paired with La Belle Époque Champagne to kick off the experience in style. In December, the Petite Fours will embrace the festive spirit with a nod to German Christmas markets.
