Chinese spirits, wines, and even sake have all been successfully paired with regional Chinese cuisine, but vibrant drinks such as cocktails and mocktails have been relatively overlooked. Every Thursday night from 24 July to 28 August, our talented young mixologists, Yvonne and Ying, present a selection of unique drinks inspired by Chinese spirit and teas, perfectly complementing our rich and savoury dishes.
Designed by Yvonne, the cocktail “Frosty” features Sichuan spirit Hong Hua Lang, blended with lychee liqueur, lychee purée, and a touch of jasmine tea—making it the ideal refreshment for warm summer days. For those who prefer a non-alcoholic option, she also offers “Crimson.” This concoction combines spicy ginger and cayenne pepper cordial with the delicate floral notes of Tieguanyin tea and is enhanced by ginseng wolfberry syrup, creating a multi-layered beverage that's as delicate as it is delicious.
Ying reinterprets the classic Resonance Cocktail with Hong Hua Lang at its core. This sunny mix of beetroot syrup, apple juice, and the vibrant botanicals of ginger and mint is the perfect way to ease into the season. Tea lovers won’t want to miss the Pu’er Royale, which features the added fruitiness of cranberry juice and rose syrup, along with tonic water for a lively effervescence.
