Looking to add some excitement to your summer plans? Try something new at the Club from the wide array of new menus prizing summer produce, or chill out with the new dishes and beverages on offer that help you stay cool all summer long.

Beat the Heat with Seasonal Chinese Fare
Seasonality in Chinese cooking plays a vital role – guiding dietary recommendations centred on the season’s peak produce as well as nourishing the body at different times of the year.
At Topaz, try Chef Patrick’s eight new mouth-watering Cantonese dishes that replenish the body from the summer heat. Meanwhile, the current rainy season also leads to an exceptional mushroom harvest, and Chef Lam at The Gallop has prepared dishes based on Yunnan’s most sought-after varieties.
Summer’s also the time to get your fill of cooling gourds and refreshing melons, so try Chef Yuen’s Stir-fried Fresh Shrimp with Angled Luffa and Lily Bulb at Trio, or the Fish Paste with Silk Gourd in Soup at Hilltop Paddock – both available in August.

Find Freshness in Local Ingredients
Using local, seasonal ingredients is a huge part of the Club chefs’ culinary philosophies. For the summer months, Hong Kong chefs turn to seasonal melons and local poultry and pork for inspiration. Try Chef Paul’s six-course “Taste of the Month” set dinner at Fortune Room, or Chef Henry’s Our Domestic Taste menu at Oi Suen, which celebrates the finest homegrown ingredients – from Tai O’s dried shrimp to bitter gourd, local soft-shell lobster to winter melon.
