The Club’s new Head of Wine Cyrielle Mascaro selects her beverage favourites for the summer

New Head of Wine at the Club, Cyrielle Mascaro, is a wine professional with over a decade of experience in designing wine programmes for hotels, clubs, and restaurants in Paris, London, and Hong Kong.

Raised in Burgundy and a true food enthusiast, Cyrielle enjoys exploring different cuisines and tasting new culinary concepts against with her “deep affection” for the vineyards. “Wine has the remarkable ability to bring people together,” Cyrielle shares. “I enjoy being surprised and discovering new wines, and the essence [of enjoying wines] lies in taking the time to come together, uncork a bottle, savour each sip, and cherish the moment.”

Bubbly: Larmandier Bernier Blanc de Blancs Latitude NV
Make it a special occasion all summer long with a beautiful glass of Champagne. This Blanc de Blancs is one of the most elegant styles of Chardonnay from the incredible terroir of Vertus, “featuring nice acidity with complex aromas of toast, floral baked apple and nuts.” Cyrielle enjoys it paired with aged parmesan cheese – at least 24 to 36months – for an ideal afternoon bite. White Wine: Domaine Antoine Petitprez Bourgogne “La Combe” 2022
Made from Chardonnay, this very pleasant wine seduces with its supple palate, long finish and delicate salinity. Coming from a plot of Loxfordian and Kimmeridgian limestone marl meticulously selected by Antoine Petitprez, the wine features flavours of citrus, ripe fruits and white flowers, and when paired with a light, sun-kissed seafood lunch, “it is divine,” says Cyrielle. Red Wine: Domaine de La Barbotaine, Sancerre 2022
“We tend to forget about the Sancerre Rouge, made from Pinot Noir,” says Cyrielle. Try this red fruit-driven wine, but with spice and vegetal notes, as a lovely accompaniment to an evening meal with red meats. “Chill it a bit before opening the bottle and it would be the best companion for summer.” Be sure to stock up from The Crest.

Cocktail: Pimm’s No.1 at Kat O Bar
The official drink of Wimbledon and synonymous with English sporting excellence in the summer, Pimm’s No. 1 is made to perfection at Kat O Bar. “Rub shoulders with fellow sport lovers and soak up the thrills on the screens as you sip on this classic, easy-to-drink concoction, mixing fruity, gin-based Pimm’s with sprite and soda,” says Cyrielle.

Cocktail: Coco Punch from The Eighth
“If your idea of summer is barbecues and afternoon parties, this cocktail is the ticket to that feeling all summer long,” says Cyrielle. Dry, crisp and subtly nutty Tio Pepe sherry is balanced by sweet and coconut-forward Malibu, doubled down with Aluna Coconut Rum for a smooth, creamy finish. Mocktail: Saicho Summer Time from The Derby
Refreshing and effervescent, this non-alcoholic option features popular Saicho sparkling jasmine tea for its notes of apple sherbet, lychee and vanilla. “Lychee brings elegant, slightly floral and fruity flavours – a blend of rose, strawberry and pear, with hints of watermelon,” Cyrielle says. “Lime juice adds a touch of citrus while basil adds hints of spice, mint, and anise – perfect for that ‘get-up-and-go’ kick.”

Mocktail: Kiwi Lemon Soda from The Old Clubhouse at Beas River Country Club
For Cyrielle, the pinnacle of poolside refreshment comes in the new Kiwi Lemon Soda at The Old Clubhouse, which pairs fresh kiwi puree and satisfying fizz with the unusual sounding but wildly popular “duck-feces fragrance” lemon tea – beloved for its sharp, citrusy fragrance (and don’t worry, it has nothing to do with duck droppings).
